Why We Started
Kabocha Food Truck was founded in late 2023 when our owner and managers came together with a shared vision: to bring something fresh and exciting to Olympia, WA’s food scene. After exploring what the community was missing, they realized there was a need for delicious, plant-based, Japanese-inspired cuisine. With that in mind, they set out to create a menu that blends traditional Japanese flavors with innovative vegan twists, offering a new go-to spot for foodies, vegans, and anyone looking to try something unique and satisfying. “I had the tofu katsu bowl, and it was delicious! When I first smelled it I was a little startled at the smell of cloves, but once I was eating the sauce intermingled with the rice and the tofu, it was totally delicious! Top marks on the crunch of the tofu cutlet as well! My partner had the Takoyaki balls and reported that they were all fantastic.”

From hosting vibrant Summer and Winter Markets that showcase small creators and local business owners to providing a space for food truck vendors to share their delicious offerings.
